Fun and super easy Morning breakfast!


APPLE-CINNAMON OATMEAL WITH AN EGG BOOST

Cook Time: 1-1/2 to 2 minutes
Makes: 1 serving

What You Need

1
EGG
1/3
cup milk  (nonfat or coconut milk)
1
pkg. (1.23 oz.) apples & cinnamon instant oatmeal I use reg oatmeal
1/4
cup vanilla yogurt (non fat)

Here’s How

  1. BEAT egg and milk in 2-cup microwave-safe bowl until blended. STIR INoatmeal.
  2. MICROWAVE on HIGH until liquid is absorbed and egg is set, 1-1/2 to 2 minutes; stir. TOP with yogurt.

Enjoy

  • Garnish with chopped apples.

  • Microwave ovens vary. Cooking time may need to be adjusted.

Prepping food for week! Easy Tips to Help Gain Control and save time!!!

SO here are some easy ideas to get you started to make a very successful week!

Tip 1. Plan out your menu for the week and stick to it. ( I plan out and do my shopping on Sundays)
Tip 2. Whatever you need for the week meat ect I get prepared so when its time to have dinner all i need to do is pop on stove or oven. I am a busy lady NO time for hours of cooking!!
Tip 3. All meats I take out from freezer or fridge marinate in sauces and place in double zip lock baggies. (Teriyaki marinade for chicken) Steak marinade ect.. whatever you like
Tip 4. Cook hamburger meat up if having for anything for week for instance ..tacos, spaghetti, I will put spices in, then container it up or gallon baggies.
TIP5. DOnt forget to label baggies so you know what is in the bag!!

Lunches Grab and Go technique
Tip 1. I will pre-baggie (snack size)  the weeks worth of fruit so grapes/apples strawberries blueberries ect -I sprinkle the apples with lemon water so they dont brown.
Tip 2. I also pre-baggie (snack size) veggies Celery carrots sugar snap peas ect..
Tip 3. I baggie up 5 snack size  baggies Means i have one child of crackersand cheese/ or pretzels, rice cakes, cheez its, pretzels chips or cookies so that she has one for each day!
Tip 4. Have children help preparing lunches. This allows them to be part of the healthy lifestyle. My daughter always knows we have a baggie of fruit a baggie of veggies and then a *snack bag* tip 3 and then we prepare the night before the sandwich and drink and any kind of dipping sauce ect..

EAT-CLEAN EGG SALAD - The Eat-Clean Diet®

This is a great recipe to make a container to stick in fridge so you can have a few times for the week! I also use a tad bit of apple cider vinegar with mine and spinach lettuce with Ezekiel Bread. You can use whole wheat! Tip use a mini container to package the egg salad and put bread in baggie separate so it doesnt get soggy!

Things to pair with for this meal:

1 mini snack size baggie APples/ some sort of fruit
1 snack size baggie of cucumbers/or some sort of veggie
100 calorie pack

Peanut Butter Apple Rice Cake .. Great Snack recipe for the week! another option if you dont like pbutter


Ingredients

  • no salt brown rice cake
  • 1/4 apple sliced thin
  • 1 Tbs of Peanut Butter
  • Cinnamon
  • vanilla
  • 2 tbs of water

Instructions

Combine water, vanilla,cinnamon, and apple in a bowl and microwave for 1 min.
after cooked add PB and mix well, top rice cake. This is so yummy and filling
If you dont like peanut butter another great option is Greek yogurt 1 tsp of honey rest of recipe!

Blueberry Cinnamon Rolls [Vegan]

Try as I might, I’m hard pressed to think of a more intoxicating aroma than freshly made baked goods with loads of cinnamon, piping hot from the oven. You know, that close-your-eyes-and-breathe-as-deeply-as-you-can scent. Well, I was rewarded with that exact olfactory experience after making these Blueberry Cinnamon Rolls. As you can imagine, it was borderline painful to wait for the rolls to cool enough to dive into one; but yes, it was worth the wait!
With a soft and lightly sweetened dough, tons of cinnamon, fresh blueberry flavor literally bursting in every bite, and a touch of glaze drizzled on top, it’s easy to forget that these cinnamon rolls are much healthier than most. The tender dough is comprised of half whole wheat pastry flour instead of 100% all-purpose, unsweetened applesauce in lieu of butter, and a mere 2 Tbsp of evaporated cane juice in place of sugar. These cinnamon rolls are sweet, what with the brown sugar in the filling, but I used only a modest amount of glaze cut back on the overall amount of sugar.
*For those of you who are interested, I plugged the ingredients into an online calorie calculator, and was pleasantly surprised that each roll came out to a reasonable 286 calories, 4.1 grams of fat, and 24 grams of sugar (admittedly high in sugar for a regular breakfast, but okay as an occasional treat). Compare that to the astonishing 813 calories, 32 grams of fat, and 55 grams of sugar in a Cinnabon roll (the linked website notes that this nutritional information came directly from the USDA or manufacturer), and it’s perfectly clear which is the better choice.*
Using my slight adaptation of Sarah’s recipe for vegan cinnamon rolls (linked below) as a starting point, I couldn’t help but add in fresh blueberries to the cinnamon filling a la Kevin and Annie (also linked below). The juicy berries were such a fantastic addition to an already delicious cinnamon roll.
I couldn’t help but snap a photo of everyone’s favorite part of a cinnamon roll… the super soft & gooey center!
Seeing as I’m posting this on a Saturday, I highly recommend that you gather together the necessary ingredients and surprise someone you love with these Blueberry Cinnamon Rolls as a special Sunday breakfast.
Blueberry Cinnamon Rolls [Vegan]
makes 8 rolls

Ingredients:
  • 1 cup plain soymilk (or almond milk), heated in the microwave for 45 seconds or until it reaches around 100 degrees F
  • 2 1/4 tsp (or 1 0.25 oz packet) active dry yeast, at room temperature
  • 1/4 cup unsweetened applesauce
  • 1 1/4 cup whole wheat pastry flour
  • 1 1/4 cup unbleached all purpose flour (plus up to 1/4 cup for kneading and rolling)
  • 1 Tbsp baking powder
  • 2 Tbsp evaporated cane juice or granulated sugar (or 1/4 cup for a sweeter dough)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup brown sugar or Sucanat
  • 1 Tbsp ground cinnamon
  • 2 Tbsp non-hydrogenated margarine, melted
  • 1 1/2 cups blueberries, preferably organic
  • 1/2 cup powdered evaporated cane juice (usually labeled “organic powdered sugar” or “unrefined powdered sugar”)
  • 1 1/2 Tbsp plain soymilk (or almond milk)
  • splash pure vanilla extract, about 1/4 tsp
Directions:
  1. Coat an 8×8 inch square baking pan, or 9-inch round cake pan, with canola oil baking spray. Set aside.
  2. Scatter yeast over warmed milk and allow to activate for about 10 minutes, or until frothy (you may need to help out the yeast a bit by gently pushing it into the milk, but don’t stir the mixture quite yet).
  3. Meanwhile, whisk together both kinds of flour, baking powder, evaporated cane juice, 1/2 tsp cinnamon, and salt in a large bowl.
  4. In a small bowl, stir together the brown sugar, 1 Tbsp cinnamon, and melted margarine. Set aside.
  5. When yeast and milk mixture is bubbly, stir in the applesauce. Add wet ingredients into the dry and mix just until incorporated. Transfer dough onto a clean lightly floured surface and knead until soft and smooth, adding enough extra all-purpose flour (up to 3 Tbsp) to keep dough from sticking, about 2 minutes. Let rest for 5 minutes.
  6. Lightly flour work surface again and roll dough out to about 1/4-inch thickness, about a 12-inch x 9-inch rectangle.
  7. Sprinkle brown sugar, cinnamon, and margarine mixture evenly over the rolled-out dough, leaving about a 1-inch border around the perimeter.
  8. Scatter blueberries evenly over the top. Gently push berries into dough.
  9. Preheat oven to 350 degrees F.
  10. Starting at a short end, carefully & tightly roll the dough jelly roll-style, making sure the filling doesn’t come out at the sides. Gently pinch seam closed. Cut the roll into 8 even pieces and place in prepared pan. Cover with a clean kitchen towel and let rise in a warm place (I like to place it on top of the preheating oven) until doubled in size, about 1 hour. Either refrigerate, covered, overnight or proceed immediately to step 11.
  11. Remove the towel and bake rolls at 350 degrees for about 25 minutes, or until golden brown on top.
  12. While cinnamon rolls are baking, prepare the glaze by stirring together the powdered sugar, 1 1/2 Tbsp soymilk, and vanilla extract.
  13. Remove rolls from the oven and let cool in the pan for 10 minutes. Transfer rolls to a wire rack, drizzle with glaze, and let sit for an additional 15 minutes before serving.

Reading Food Labels - Nutrition Facts Explained

Ok so 12 years ago I learned how to read food Labels. This has not only taught me how to "Eat Clean", but It has also taught me how to establish Healthy Eating habits! My mom was always big about teaching us the importance of Real Raw food, not the processed junk we feed ourselves and families these days!
 I think this is a simple but very effective tool that everyone should know how to do, also teach those small children.  The saying "You are what you eat" we have all heard it, but if you are shoveling in candy, sugar, cakes, cookies,pizza chips and processed foods then you are going to show it on the outside. I believe when this happens we become discouraged or disappointed in our selves and we begin to have a defeated attitude. You begin to feel angry, tired, stressed and this is not the way to live. Everyone has the opportunity to be That person that God created them to be! Amazing/Beautiful/ Warrior/Fighter/ we get knocked down and we get right back up!!!
Start with the little things and the Big things will come!!!

Designed to Shine

We were all created to be excellent. When we were little we started out with dreams, goals, visions. What happens as we get older. I think that we realize that sometimes our fairy tales arent achievable so we quit dreaming and we turn our excellent dreams into average dreams. Well God put a fire deep in my heart to encourage, uplift, inspire and motivate others to "LIVE Out Loud" to Dream to be happy to live a successful healthy life.
 My Favorite verse in the Bible is Phil 4:13 because basically it sums up to these words  "Become your dreams, and Never Give up" !! We are all in a daily fight we must remain persistent and know that "the enemy wants us to be nothing, He wants us to Give up, get discouraged, and lose at this amazing life. But God on the other hand has big plans for us and wants us to Dream, Live, Pay it forward, achieve, and Push forward. He says Keep running the race that is set before YOU. Keep your eyes on Him and run this race. This race is NOt a short sprint. This race is long and requires endurance, persistence and sustained effort. WHen you take your eyes off of the Prize You slowly hinder your Goals.
So what are some goals of yours?
